Chickpea Stir Fry – The Daniel Fast

Week one is DONE! Are you doing a happy dance yet?! Was your week one as hard for you as it was for us?! Oh man. The amount of intense stuff that happened this week is NUTS. But that’s another post for another day. Let’s get on to this delicious stir fry!

Hubby made this one, and it was so full of flavor and surprisingly very filling. Also, VERY easy.

Chickpea Stir Fry

(Serves 2)

Ingredients:

1 can chickpeas (drained)

1 package of frozen stir fry veggies

1/2 cup pineapple

Liquid coconut aminos for topping

2 cups cooked brown rice

Directions:

Combine chickpeas, frozen veggies, and pineapple in a large pan. Cook until soft, serve over brown rice and top with coconut aminos.

That’s it! Another easy meal. You can chop fresh veggies if you prefer, but using frozen veggies is a huge time saver! Enjoy!
