Gluten Free Lemon Poppyseed Protein Waffles

If you are gluten free, you know the struggle.

The struggle to find waffles. The struggle to find GOOD waffles of various flavors. The struggle to find good PROTEIN waffles.

So, I decided to make my own. And now you get to benefit! Hooray!

I generally like to “cheat”…aka make things go faster and make them simpler because I have 3 kids and 2 businesses and we do ministry and I’m in pastor school and and and…there’s no time right now to do everything from scratch. So if you’re a from scratch person, make your own “from scratch” mix and then follow the directions after that on my recipe card. Haha.

But if you’re like me and you don’t have time for that right now, this recipe is super simple for you. And you can make any flavor you want really. I just had a hankerin’ for some lemon poppyseed and it DID NOT DISAPPOINT. So here you go.

These were so good that my kids were BEGGING me for a bite. And because sometimes I am selfish, I said NO WAY. (Jk. They had already had pancakes that morning and I hadn’t eaten much of anything for the day so I gave myself permission not to share. But you do what you want! Haha!)
