Indian Chickpea & Quinoa Curry – The Daniel Fast

Hello Daniel Fasters! You’re almost done!!! 😍 Just a few days left and you have FINALLY made it! Now, if you want to go out with a BANG, this meal will help you with that!

If you love curry, you’re going to love love love this! I wanted to eat the whole pan, it was so tasty! And yes, it tastes just like regular curry. 😋

Indian Chickpea & Quinoa Curry

Ingredients:

1 can chickpeas (drained and rinsed)

1 cup non-dairy milk (I used an unsweetened almond/coconut milk mix)

2 shredded carrots

1 cup peas

1 tbsp green curry paste

1/2 tbsp curry powder (use less if you don’t like so much kick!)

1/2 tbsp turmeric

Handful of chopped Kale

Any other veggies you need to use up or want to add

Combine all ingredients in a pot and simmer until sauce is nice and thick, kale is tender, and chickpeas are soft. Serve over a cup of cooked Quinoa.

This was probably one of my most favorite dinners that we have made on #thedanielfast and I can’t recommend it enough!
